Delicio combines traditional methods with innovative slicing technology in the manufacture of high quality meat and salad products.
Among Delicio's specialities are traditionally made meat products, which are increasingly in demand. How can the company produce faster without compromising on the authentic character of its products? A new slicer is the solution.

elicio specialities clearly stand out by their natural quality against industrially standardised mass production. To ensure this, many steps in the workflow are carried out by hand by the medium-sized food manufacturer. However, there are also processes which machines can do just as well, if not better. In the high-tech production facility of Delicio there is, among other things, an innovative packaging line with Bizerba systems. Even with his most recent concern, Delicio founder Léon Doene turned to Bizerba: In order to service the growing demand, he planned to increase the capacity of meat product slicing.

Challenge

High quality products, frequent change

Delicio makes meat products such as cooked ham in the natural way. Unlike industrial products that are heavily pressed, the texture can therefore vary from batch to batch. For this reason, the cut must be carried out with a precisely controlled speed in order to achieve the perfect slice.

Speed does not just mean capacity

If Delicio wants fast slicing, it is not just a question of capacity in the ongoing service. This is because in the Middelburg factory frequent product changes are the norm. Introducing a large industrial system would therefore make re-equipping and cleaning time-consuming. In addition, the sickle blades which are predominantly used in the industry are not optimally suited to the delicate Delicio products. Not to mention the large space requirement for an industrial-sized slicer, including the additional grinder required.

Delicio's Wish list

A compact slicer with circular blade was therefore desirable. It should achieve perfect slice results with additional capacity, even for the delicate products. The time needed for product change and cleaning should be minimal and the sharpening should not require much effort.

Solution

Fulfilling demand - and much more

On the advice of Bizerba, Managing Director Doene decided on the compact and A560 mobile slicer. The solution, which can be networked, is equipped with an integrated scale and target weight control.

Integrated blade sharpening

The A560 works with a circular blade which is sharpened in the machine without requiring removal. It can cut at comparatively low speed, and the results, even with demanding Delicio products, are always perfect slices.

Also suitable for large pieces of meat

In the optional exchangeable cutting frame, which is also available, the A560 can even process large pieces of meat from the Delicio range, such as pork rump joint. Through the special construction of the mounting, the meat remains almost completely intact while clamped in the frame - an important requirement for Léon Doene's premium products.

Slice-accurate trend control

By slicing to target weight with slice-accurate trend control, Delicio can minimise give-away. For products with a consistent diameter, Delicio produces, for example, packaging with six slices, where the net weight is precisely between 99 and 101 grams, by employing the corresponding slice thickness. Over- or underfilling in the relevant circumference is therefore impossible.

Hygienic Design

And, last but not least: For a system with industrial capacity, the effort required for re-equipping and cleaning the A560 is minimal. Managing Director Doene: "The slicer is simple and practical to clean. Everything can be taken out, each area is accessible. The machine can be completely cleaned with soap and water and disinfected at a low pressure." Perfect for the frequent product changes in the Delicio factory on the Schelde.

Benefits

Enhanced capacity, perfect products, improved added value

Today, Delicio can handle the growing demand for its meat products in a more flexible and quicker way. For bigger batches, the business profits from a maximum capacity of up to 250 slices/min. Even with smaller batches and frequent product changes, the output increases. This is because the A560 can be cleaned especially quickly. And the saved configuration for the next product can be called up directly on the machine by fingertip controls.

Energy saving included

Unlike the larger industrial slicers with sickle blades, with rotating blades the product does not need to be cooled down quite so much before slicing. The product remains intact even at a lower rotation speed. This not only minimises the cost of electricity but also the space requirement for the cooling device.

Give-away up to 15% reduced

Production interruptions for sharpening the blade are not necessary thanks to the integrated sharpening function. Through the slice-accurate trend control, the A560 reduces the give-away by up to 15% and thereby increases the added value Léon Doene's quote "This machine is perfect for slicing traditional products on a smaller scale."
